TOP TIP! How to apply neatly in strips to the side of your cake (as used on my teacup cake) -

Firstly, cut your strips to the desired width (tip: you can use a paper trimmer, or ruler and xacto knife to make the process faster – time is money ppl!).

Next, roll out a very thin piece of gumpaste, you are going to use this to back your stripes on to so as big a piece as you dare roll out! A light coloured gumpaste is best, you don’t want it to show through the fine wafer paper. I used blush pink fondant to cover this cake so used the same colour for the gumpaste backing.
Working quickly but carefully, brush a thin but EVEN layer of piping gel to the back of your strips (I usually work with around 5 at a time, mainly because my rolled out piece of gumpaste is never that big and that’s all I can fit on to it, (lazy I know, but hey I get bored once it gets to around a 10” wide ‘blob’ – technical term). Once you’ve got the babies coated in the gel, stick them to the gumpaste and when you have as many as you can fit on, turn the gumpaste sheet upside down and run your smoother over the underside (which is now the upside) to ensure that those little strips cant curl at the edges, you can also place something flat and slightly heavy on top to weigh it down, like a work board (I know it’s tempting but don’t sit on it to flatten he he). I usually start rolling another piece of gumpaste whilst I’m waiting for them to dry a little for a few minutes.
Turn your original gumpaste ‘sheet’ upright and cut around the edge of the strips that are glued on, and now they have a thin gumpaste backing, then apply the gumpaste backed wafer paper strips to your cake using piping gel (it’s out already, might as well use it!), or edible glue etc. Repeat with other strips and gumpaste. Voila! nice neat pretty and even stripes with no worries :-) Sounds like a long process but I find it’s actually faster then cutting normal plain gumpaste strips to candy stripe a cake, wafer paper strips never go wonky like those pesky plain gumpaste ones as they are sturdier and hold their shape ;-)
